Edible: leaves (raw/cooked)

Egyptian spinach is known by many names where it is grown, such as in the Middle East, West Africa, India and Southeast Asia. The plant produces an important natural fibre known as jute (hence it’s other name jute mallow), however its delicious leaves are also a highly nutritious green that contains calcium and beta carotine among other vitamins and minerals.

Cooked, its leaves are mucilaginous, acting as a natural thickener in soups that we’ve seen in Vietnamese restaurants called Canh Rau Day. In Egypt, its also popularly used in soups, served over rice.
