There are many varities of amaranth, those that are grown for grain and others cultivated for their leafy greens. We know the ones grown locally as bayam or Chinese spinach. They are versatile greens in dishes that feature in local dishes we are familiar with, such as stir fries with garlic, yong tau foo and curries.
