Wrap leaves in newspaper and store in the fridge for up to 5 days. Fresh flowers (calyces) can be stored in the fridge for 7 days.

Roselle is a type of hibiscus originating in Africa. Its young leaves are used in stir fries in Southeast Asian countries, such as in Burma in a dish with bamboo shoots and dried shrimps. Its flowers have a cranberry-like taste which lends well to jams or chutneys.
To make a tart and refreshing tea, remove the seed pods and boil the flowers in water for 8 to 10 minutes until the liquid turns a bright red colour. The tea is a popular health drink in Thailand where it is said to reduce blood pressure, and can be drunk hot or iced. Add sugar to taste if you like.
